Vietnamese Lemongrass Pork Tenderloin

Vietnamese Lemongrass Pork Tenderloin

Ingredients:

(2) 8 oz. pieces pork tenderloin
1 recipe Lemongrass Marinade

Directions:

  1. Pour half of the marinade over the tenderloin to coat. Marinate the pork tenderloin 1 day in advance.
  2. Reserve the other half of the marinade in the refrigerator.
  3. Place the marinated pork tenderloin on the hot grill to sear the outside surfaces creating cross marks.
  4. Place seared pork in a shallow roasting pan
  5. Put the roasting pan with the grilled pork tenderloin into a preheated 500 degree oven for 12 to 14 minutes or until it reaches an internal temperature of 130 degrees.
  6. Remove the cooked tenderloin and let rest for approximately 2 minutes. Slice the tenderloin on a slight bias into 8 to 10 slices per loin.
  7. Arrange the sliced tenderloin over a bed of steamed rice. Spoon the reserve marinade over the sliced tenderloin. Serve with your favorite stir fried vegetable.

Lemongrass Marinade

Ingredients:

1 tbs. lemongrass powder
¼ cup minced ginger
1 cup chopped scallion
1 oz. chopped cilantro
1 tsp. chili flakes
3 tbs. fish sauce
2 tbs. sugar
½ cup canola oil

Directions:

Mix all ingredients in food processor or blender until uniform.
